Vegan Sweet Potato Dessert

I'm back with another purple sweet potato dessert. This time, instead of using heavy cream, I use thick coconut milk and corn starch to make this ice cream like dessert. If you're looking for a yummy vegan dessert, this one is for you!

Vegan Sweet Potato Dessert (Sherbet)

  • 1/2 lb purple sweet potato
  • 1 cup thick coconut milk
  • 1/2 cup water
  • 3 Tbsp corn starch
  • 1/4 cup caster sugar
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  1. Peel, dice, and steam sweet potato until softened.
  2. Mix all ingredients in a blender until very smooth.
  3. Simmer in a sauce pan, keep stirring constantly until thickened.  Let cool.
  4. Freeze at least 4hrs (mix it a few times every 2hrs to get nice and smooth ice cream texture)
  1. You can use any kind of sweet potato for this recipe.  Just make sure you steam or boil it until soft.
